Vegan Pepper Pasta Sauce

For fellow Vegans/Vegetarians - this is a modification on a Rachel Ray recipe. It is really awesome with Spelt spaghetti.

I am an ad-lib cook - hence, I do not use measurements - sorry..

1 Jar Red Spanish Peppers (preferably in Olive Oil)
Parsley
Chopped Black Olives
Extra virgin olive oil
garlic
onion/or shallot
brazil nuts (replaces anchovies in the original recipe)- ground into a powder - I used a coffee grinder
salt and pepper to taste
Spelt Spaghetti - better for you than wheat

Chop finely or use food processor : jarred red peppers,garlic, onion, parsley. Saute' in large sauce pan with olive oil. Add the Brazil nuts, cook down - you can add a bit of the starchy water from the pasta that's cooking. Salt and pepper to taste.
Finish cooking - this takes about 5 minutes. I keep tasting while cooking to make sure it's to my liking. This is a quick recipe. Add chopped black olives, stir. Drain pasta, add to sauce and mix well. Buon Appetito!
