Sharing my own recipes for maintaining a healthy diet as a vegetarian. The contents will be added to on a regular basis, as I have had several requests from friends that are new to this and would like some good, easy recipes for a wide variety of culinary choices. Please check back often as I will commit to add to this at least once a week! Enjoy and please, always thank Mother Earth for what she provides!

VEGGIE BURGERS

1 C. brown rice
1 C. cooked lentils, drained
1 small onion, finely chopped
1 carrot, grated
1 egg
Fine Italian bread crumbs

Mix all ingredients together well and add enough fine Italian bread crumbs for a consistency that will form into patties...just enough to hold them together well.
The patties may either be pan-fried in olive oil or you may place the formed patties on a lightly oiled cookie sheet to bake (at 350 degrees) until golden brown on the edges.
Patties may be frozen for future use.

May be eaten as is or placed on whole grain bread and garnished with your choice of toppings:
Cheese, lettuce, tomatoes, onions, sprouts...

AVOCADO SANDWICHES

Pita bread or whole grain bread
1/2 Avocado, ripe and sliced

Slice pita bread in half and open pocket. Whole grain bread may be also used.
Spread bread lightly with either mayo, tahini, or ranch dressing
Place avocado slices inside
Top with assorted veggies...sprouts, lettuce, tomatoes, onions
Sprinkle lightly with your favorite veggie salt (Spike), to taste.

Yummy!

HEAVENLY WHITE LASAGNA

Lasagna Noodles (pre-cooked or "no-boiling required")
Alfredo Sauce
Mozzarella cheese, grated
Parmesan cheese, coarsely grated

Preheat oven to 350 degrees

Coat baking dish (whatever size is needed) lightly with olive oil
Spread just enough Alfredo sauce to lightly coat bottom of dish.
Begin making layers, as many as desired...lasagne, mozzarella, alfredo sauce...end the topmost layer with the mozzarella.
Then, top with parmesan cheese.

Bake approximately 1 hour, or until it is lightly golden brown.
Cool 10 minutes.

Left-overs may be frozen and rewarmed for future use.
